Weekly Weigh-in

Woo-hoo!! Not only did I get to go to church yesterday for the first time in 3 weeks, but I also had a great week! Will just have to be very careful with the back situation, but so far, so good!

This was a good week eating wise. This was my 10th week, and I lost another 2 lbs., for a total of 19!!!!! Yea!! I stayed the same in the waist (lost 10"), but I did lose another inch in the hips area for a total of 11" down!!! I am eating mostly vegan, but occasionally I slip in a little lowfat meat. Our Tom Thumb (Safeway) has 98% lean ground beef from Springerhill Ranch, and sometimes I have 99% lean turkey breast or an occasional grilled chicken breast (boneless, skinless, of course!). However, I am finding more and more that I really don't want (or need) as much meat, and I am satisfied with the veggies, grains, nuts, and fruits.

Thanks for all the well-wishes when I was down with my back. People brought groceries, got the mail, took my mail to the post office, and called or emailed to check on me. Friends are the best!!!! Y'all take care!!

About me!

I started to say, "Good evening." but I realized it is past midnight, so I guess the proper statement would be "Good morning!" Today was the first time I had been out of my apartment since I slipped on September 29th. I was not sure I even remembered how to drive, but it came back to me! I had a couple of prescriptions that needed to be filled at the pharmacy which would not be ready till noon, so I lazed around this morning, and finally hit the road about 12:10.

I had errands to run at the post office and the bank before getting to the pharmacy. They filled my prescriptions while I grocery shopped. I must say, I did OK till near the end of my shopping. The list was fairly long, since I had not personally been to the store since Sept. 27th. By the time I checked out, I had to enlist the help of the checker to unload my cart for me, and he was very good at making sure I didn't have any bags that were too heavy! Not all checkers or sackers know the meaning of "pack them light!"

Most of the afternoon was spent working at the computer, sending out eblasts for our church. We're coming up quickly on our Lord's Acre celebration the first Saturday of November, so there are lots of announcements going out! That is a "job" I love to do!!

Well, I just wanted to tell you that I escaped the apartment today and that I survived! I still cannot sit for long periods at a time, but that will improve in the next six weeks or so. Take care now, and I'll see you the next time there's news to share!

Weekly weigh-in

Good Morning!!

As you probably have already read below, I was not able to weigh or measure last week, due to the fall I took on Sept. 29th. I have not been able to stay on a vegan eating plan totally, but I have been watching what I ate. It had to be something that did not require bending into the fridge or the pantry, so I was very limited on my choices. I had made a batch of cornbread dressing to take to the church pot luck on the 30th, but of course, I never made it there, and neither did the dressing!! So that first week I ate the following:

Breakfast: Jimmy Dean frozen turkey sausage, egg white and cheese on English muffin or a bowl of Rip's cereal mix

Lunch: A bowl of cornbread dressing or a baked potato with 2 tsp. low fat oleo (Smart Balance)or a turkey breast sandwich on Whole Wheat bread with mustard

Snack: Honey crisp apple or frozen mixed berries, thawed with a small amount of Splenda

Supper: 6-8 lowfat turkey meatballs with BBQ sauce from my church friends or veggie soup made with: mixed veggies, fire-roasted tomatoes, diced tomatoes, low-sodium chicken broth, and dried Italian spices.

Snack: Diet DP and 2 Ryvita crackers or 12 almonds

I was also taking all my supplements and my blood pressure and thyroid meds.

So, you can see, I was not eating vegan, and I'm sure it was not totally nutritious, but it was the best I could do under the circumstances.

My good news is that it did not wreck my weight loss plan. The stats for the past 2 weeks are as follows:

Weight: Lost 3 lbs. for a total of 17.4 lbs., 2" in my waist for a total of 10" lost, and 1" in my hips for a total of 10" lost there, too!!!! Whoopie!!!!!

I will be glad when I can add some veggies!!!

About Me!

Good morning! I apologize for not having brought my blog up-to-date this week. Saturday I slipped in the bathroom, caught myself on the door handles, and wrenched my back. This is an old (53 year old) injury that I got in a tumbling accident in high school when I was 16. Anyway, it just takes time to heal the hyper-extended spinal muscle along with ice packs. I prefer not to use drugs, because all they do is make me sleep round the clock, and that's not good either!!

I am better, but I cannot step up on the scale at this point, and I am just having to eat whatever I can find in the freezer or fridge, which is not always the best choice! So, I have no stats for you this week. Hopefully, I will be better by next week and can weigh and measure. Take care! Liz

Oven Roasted Veggies

This is one of my all-time favorite recipes!!! Serve with broccoli, yellow squash, or a salad, along with brown rice or quinoa! YUM!!!

INGREDIENTS

1 sweet potato, peeled & cubed
3 Yukon Gold potatoes, cubed
1 sweet white onion, in wedges
1 red onion, in wedges
1 small butternut ssquash, cubed
4-6 carrots, cut into stix
4-6 parsnips, cut into stix
3-4 small beets, quartered
20-30 cloves of garlic
1 Tbsp. chopped fresh thyme
2 Tbsp. chopped fresh rosemary
1/4 cup olive oil (EVOO) (I cut back to 2 Tbsp.)
2 Tbsp. balsamic vinegar
Sea Salt
Freshly ground black pepper

DIRECTIONS
Preheat oven to 475 degrees F and cover a large roasting pan with foil. Spray wth cooking spray to prevent sticking.

Combine all the veggies in a large bowl and toss them with the remaining ingredients. Toss to assure even coating and then spread into foil lined roasting pan.

Roast for 35-40 minutes in preheated oven. Stir every 10 min until veggies are cooked through. They should be nicely browned. I had to roast mine for about an hour to get that effect.

Weekly Weigh-in

This has not been a great week. I spent two days with fluctuating blood pressure....up and down the roller coaster!! It made me very dizzy and nauseous, but that seems to be behind me. I was not able to eat much....mostly slept, but I have lost some of what I gained over those two days of not being able to eat. Your body goes into starvation mode, thinking it won't get any more food, so it stores everything you eat!! You gain!! I know that. Anyway, I had gained almost 5 lbs. in 2 days, but this morning I was down 2 of those lbs., so I am at having lost in 7 weeks 13 lbs.

BUT....

I lost inches this week!!! 1-1/2 inches more in my waist, for a total of 8" and another inch in my belly/hips for a total of 9"!!!!! I'll take inches any day. Also, although I am not EXERCISING, I am moving more, walking more, having more energy and am so happy that the inches are pouring off!!
